From peat bed to malt
Peat is compressed, partly decomposed plant matter. When burned in a kiln, smoke compounds — including phenols — attach to damp malted barley.
The duration and intensity of smoke, peat composition and later production choices all affect character. Peat is used before fermentation and distillation; smoke is not added to the finished whisky.

What does PPM actually tell you?
PPM means parts per million and usually describes phenolic compounds in malted barley before distillation. It provides useful process context but does not directly predict how smoky a glass will taste.
Distillation, cut points, casks, maturation, bottling strength and personal sensitivity all change perception. Compare PPM only with the producer, bottling and measurement stage in view.
Taste smoky whisky deliberately
Nose from a little distance and identify the type of smoke: bonfire, cold ash, tar, iodine, earth, seaweed or smoked food. Then notice whether sweetness, fruit, salinity and oak support or sharpen it.
Compare two whiskies side by side before adding a few drops of water. Use the aroma and water guides to name changes; the Islay guide helps prevent coastal associations from becoming automatic claims about origin.
